Day 1: Black Bean and Plaintain Tostadas
These are black beans and plantain tostadas with crema (sour cream and soy milk), tofu queso fresca, guacmole, lettuce, tomato. We made our own home fried tostadas. Served with Annatto Spanish Rice.
